Ingredients:
- 8 cups of cubed bread (stale bread works best, but you can also toast fresh bread in the oven)
- 2 tablespoons olive oil or vegan butter
- 1 large onion, diced
- 3-4 cloves of garlic, minced
- 3-4 stalks of celery, chopped
- 1 medium carrot, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 teaspoon dried thyme
- 1 teaspoon dried sage
- 1 teaspoon dried rosemary
- 1/2 teaspoon dried parsley
- Salt and black pepper to taste
- 2 cups vegetable broth
- 1/2 cup dried cranberries or raisins (optional)
- 1/2 cup chopped pecans or walnuts (optional)
Instructions:
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat the olive oil or vegan butter over medium heat. Add the diced onion, garlic, celery, carrot, red bell pepper, and green bell pepper. Sauté for about 5-7 minutes, or until the vegetables start to soften.
- Stir in the dried thyme, sage, rosemary, parsley, salt, and black pepper. Cook for another 2-3 minutes to allow the spices to become fragrant.
- In a large mixing bowl, combine the cubed bread, sautéed vegetable mixture, and optional dried cranberries or raisins and chopped nuts.
- Slowly pour the vegetable broth over the bread mixture, tossing gently to combine. You want the bread to be moist but not soggy, so adjust the amount of broth as needed.
- Transfer the stuffing mixture into a greased 9×13-inch (23×33 cm) baking dish or a similar-sized ovenproof dish.
- Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
- After 30 minutes, remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown and crispy.
